BEEF STEW

With cold winter weather blanketing so much of the United States right now, I thought I would share an easy and delicious Beef Stew recipe.
Since this recipe can be prepared in a crockpot, it is great for both those who work outside the home, and for those who may be home but find themselves too busy to spend a lot of time in the kitchen preparing a meal.
INGREDIENTS:
1 pound beef stew meat, diced and trimmed
1-14.5 oz. can of diced tomatoes
1 pound mixed vegetables, frozen
approx. 6-8 small to medium sized red potatoes, washed and diced (not peeled)
Fajita Spice
Garlic Salt
Water
PREPARATION:
Put stew meat into a large crockpot. Pour in canned tomatoes, the frozen mixed vegetables and the diced red potatoes. Add water, filling to approx. 1 inch from the top. (leave a little room so it doesn’t simmer over!) Sprinkle in desired amounts of fajita spice and garlic salt. I use approx. 3 tablespoons of fajita spice and just a couple dashes of garlic salt.
Set slowcooker on low setting and slow cook 6-8 hours.
This is delicious served with jalapeno cornbread!
