CHEESY CHICKEN & BROCCOLI CASSEROLE
This cheesy chicken casserole is quick and easy to make and it’s a yummy way to get your kids to eat their green veggies!
INGREDIENTS:
3-4 chicken breasts (we use boneless, skinless)
2-8 oz. cans cream of chicken soup
8 oz. sour cream
8 oz. mayonnaise
2 1/2 cups cheese, shredded
2 cups cooked rice
2 cups broccoli, fresh or frozen
6 corn tortillas, soft
onion powder
garlic salt
PREPARATION:
Boil chicken and dice or shred using a fork.
Mix chicken with the soup, sour cream, mayonnaise, seasonings and 1 cup of cheese.
Mix cooked rice, raw broccoli and add an additional 1 cup of cheese. Stir into chicken mixture.
Lightly spray a 9×13 inch baking dish with cooking spray and line bottom with soft corn tortillas.
Evenly spread mixture over tortillas and top with remaining ½ cup of cheese.
Bake at 350* for approx. 30 minutes.
